anything is good when garlic is involved.
even kale!(i like kale even when garlic ISN”T involved. jordan on the other hand-does not).
so yes, i made some garlic roasted kale. and it was delish…jordan even called it “interesting” and would eat it again(this is good news as the boy hardly ever gets in leafy greens).
kale is loaded with important vitamins and minerals. it’s definitely a nutrient dense food and easy to consume this way.
i only used half a bunch of kale since i thought i’d be the only one enjoying. kale shrinks considerably when you cook it, so be prepared. if you have more than two people eating it-use at least one whole bunch, if not two.
wash and dry(thoroughly) your kale.
de-rib and give a rough chop to the leaves.
mince 2-3 cloves of garlic. drizzle leaves with EVOO(just a smidge). season with cracked pepper, sea salt and minced garlic. toss it all together so it coats evenly.
bake at 375 for 15-20 min. giving a quick stir every 5 minutes.
