tuscan veggie soup

In attempts to clean out my pantry of pasta(insert sad face here) and canned beans, I threw together a most delicious soup for dinner tonight. I always have atleast a couple boxes of pasta laying around in the pantry…because let’s face it, pasta is so versatile and easy and comforting!…seriously, what’s more comforting than a bowl of  hot, garlic-y, carby noodles? nothing. the answer is nothing. So anyway, yes, pasta, i’m sloooowly trying to eliminate it and all grains(which will be a much slower and harder process) from my diet. And beans, well, I still eat those, I just prefer to buy dry beans and prepare them myself.




1 carrot diced

1/2 onion diced

1-2 cloves garlic minced

1 tsp crushed red pepper

1/2 tsp oregano

S&P to taste


2-3 cups vegetable(or chicken) broth

1 can cannellini beans-drained

1 can diced tomatoes

couple handfuls of baby spinach leaves

ditalini pasta(i had half of a box left, so that’s all i used).

to prepare:

cook and drain pasta, set aside.

in saute pan- add a drizzle of evoo, minced garlic, onion and carrot -cook until soft. add crushed red pepper, S&P, oregano.

in large pot- add vegetable broth, veggies, drained pasta, drained beans, tomatoes with most of juice.  bring to boil, reduce heat, add spinach and simmer for a few minutes.



goes great with some rosemary ciabbata (hey, i’m not grain free YET!)
