carrot cake muffins

These are paleo friendly!


6 eggs

1/2 c coconut oil

2 Tbs vanilla

1/2 c honey

1/4 tsp sea salt

1/2 tsp baking soda

2 tsp cinnamon

1/2 c coconut flour

2 c shredded carrots

1/2 cup raisins (optional)

preheat oven to 350. grease the muffin tin with coconut oil. combine the eggs, coconut oil, honey, vanilla in large bowl and mix with electric mixer. add in salt, baking soda and cinnamon. sprinkle flour over batter and slowly whisk in until smooth. fold in carrots and raisins. drop into muffin cups and bake for 20 mins.
